Kale Chips Recipe

Oh my gosh, these are absolutely amazing! Who would have thought that kale would become so crispy when baked? It is incredible! The great thing about these chips is that you can season with any of your favourite spices. I love the combination of salt, freshly cracked black pepper and curry powder. There is no real recipe, just a spray of olive oil and a sprinkling of some seasoning and bake for 10 minutes or so for a crunchy delight! Jerome and I made these as a side for my Step-dads birthday party. He absolutely loved them. Kale chips taste really nice as finger-food or as a replacement for crackers with dip. I love dipping my kale chips into hummus... so delicious! Well, I hope that you try this recipe and love it as much we do :)

   1 bunch of curly-leafed kale
   salt & pepper
   spray olive oil

   seasoning (see the tips for ideas)

  1. Preheat oven to 180 degrees celsius (356 F) and line a baking tray with baking paper.
  2. Pull the kale leaves from the stems and place the leaves onto a baking tray in a single layer. Discard the stems. 
  3. Lightly spray the leaves with olive oil.
  4. Sprinkle with salt, pepper and any desired seasonings. 
  5. Bake for 10 minutes or so until crispy, flipping once.
  6. Serve immediately! 

  • Seasoning options: Curry powder, 'smoked' paprika, vegan parmesan, sesame seeds, cumin, chilli flakes etc...
  • Storing - Store any uneaten kale chips in a tightly sealed container or jar for one day or so. Make sure the kale chips are completely baked and dehydrated before storing or else the moisture will make them soggy.
  • I use curly kale.
  • In some areas it may be difficult to find kale... I can always find a bunch at fruit and veggie stores rather than the supermarket. 

The nutrition analysis above shows that one cup of kale (67g) is only 34 calories and is also amazingly good for you. Every bunch of kale you buy will vary in weight especially once you remove all of the inedible bits. Did you know that 1 cup of kale is high in iron, magnesium, phosphorus, riboflavin and thiamin? It is also VERY high in calcium, manganese, potassium, vitamin A, vitamin B6 and vitamin C? Incredible! This is one amazing power food.

Vegan Curried Coleslaw Recipe

When I was little, mum would make this delicious curried coleslaw and I absolutely loved it. It has now been "veganised" and continues to be my favourite coleslaw recipe in the whole world. No more boring coleslaw for you! I think this is a great recipe for a barbecue, picnic or lunch as all vegans and non-vegans will enjoy it due to its amazing flavour! It has the amazing kick of curry powder, the sweetness from the raisins and the sourness from the green apples. Yum yum yum.  I could eat a whole bowl of this for dinner. I really hope you enjoy this as much as we do!

serves 4 as a side

   5 cups thinly sliced green cabbage
   ½ cup thinly sliced green onions
   ½ cup grated carrot
   ¼ cup grated green apple
   ¼ cup raisins

   ¾ cup vegan mayonnaise
   ½ tablespoon curry powder
   salt and pepper
   ½ tablespoon brown sugar
   pinch cayenne pepper

  1. Make the salad dressing by adding all salad dressing ingredients to a bowl. Whisk to combine. Set aside.
  2. Add the cabbage, green onions, carrot, apple and raisins to a large bowl. Toss to combine.
  3. Pour the dressing over the salad. Toss until the salad is evenly coated by the dressing.
  4. Serve immediately or refrigerate until needed.

  • You can use our vegan mayonnaise recipe located here or purchase a store-bought brand.
  • Season with salt and pepper as desired to your liking. Also, if you like a sweeter coleslaw, feel free to add any sweeteners. 
  • Add more curry powder to your liking. If you live in Australia,  I use Keens Curry Powder.

Vegan Thai Coconut Noodles Recipe

Serves 4

The other night, Jerome and I really felt like a delicious bowl of noodles but I couldn't really be bothered to cook a big meal. So, I decided to make a quick but delicious noodle dish with a tasty sauce prepared in the food processor. We absolutely loved it and I know that it will be a great week-night meal for those busy workaholics! Not only does it have that genuine Asian noodle taste but it is also extremely easy to make! The flavours are so amazing that I bet you will eat it straight out of the frypan! :)

   2 garlic cloves

   1 tablespoon vegan red curry paste
   thumb size piece of  ginger
   ¼ cup veggie stock
   ¾ cup coconut milk
   1 tablespoon soy sauce
   salt and pepper
   1 tablespoon sesame oil
   ½ cup raw cashews

   150g extra-firm tofu, diced
   1 tablespoon kecap manis
   200g rice noodles
   1 tablespoon oil
   1 cup roughly chopped broccoli florets
   1 cup chopped green beans
   1 cup diced red capsicum
   ½ cup finely sliced green onions
   coriander to garnish

  1. Add the diced tofu to a bowl. Spoon in the kecap manis and toss around until the tofu is evenly covered. Set aside.
  2. Add all of the 'sauce' ingredients to a food processor or blender and process until completely combined and smooth. Set aside. 
  3. Prepare the rice noodles according to the packet instructions. Drain and set aside.
  4. In a fry pan or wok on high heat, add the oil, broccoli and tofu and toss around. Stir fry for about 5 minutes until the broccoli is browning and the tofu has browned on all sides.
  5. Add the beans and the capsicum and stir fry for a couple of minutes until the beans begin to tenderise. 
  6. Add the green onions and the and noodles and toss to combine.
  7. Pour in the sauce and toss to evenly coat the noodles.
  8. Stir fry for another 1 to 2 minutes until the sauce has heated through. (Be careful that the noodles do not stick to the bottom of the pan).
  9. Take off the heat and serve immediately.
  10. Garnish with coriander leaves and an extra drizzle of coconut milk if needed. Enjoy!

    Vegan Whipped Cream Recipe

    When I first transitioned to the wonderful vegan lifestyle I wondered how I would master an easy vegan whipping cream recipe. I think every vegan wants delicious cream with only three ingredients! And this is it! I have been making this cream for a year or so now and the other day when I was making it, I thought "Why haven't I yet published this on Veggieful?". So I immediately put another 2 cans of coconut cream in the fridge to be ready for Jerome to photograph. 

    This recipe is showing you how refrigerating cans of coconut cream over 10 hours or so will allow the fatty coconut cream to separate from the oily milky content. You can then scoop off the thick cream layer, add your sweeteners and whip it to your liking. Ta da! You may have seen this idea scattered around the internet or on pinterest as it is such an amazing thing to have on hand. I now always keep a couple of cans of coconut cream in the fridge so that I have vegan cream whenever I need it! Get ready for your desserts to be amazing and for a few days of  having cream on everything! Haha :)

    Makes 1 cup of cream

       2x 400ml cans full-fat coconut cream (not coconut milk)
       1 tablespoon icing sugar (confectioners sugar)
       ¼ teaspoon vanilla extract 

    1) Put two 400ml cans of full-fat coconut cream in the coolest part of your fridge. Try not to shake or disturb the cans.

    2) Refrigerate for 10 or more hours until completely cooled through (The longer it has been in the fridge, the better and thicker the cream will be).

    3) Without shaking or disturbing the can, carefully sit the can upright and open it.

    4) As shown in the photo above, there should be a thick layer of fatty coconut cream which has separated from the coconut milk and oil below. Scoop off the fatty creamy layer from both cans and place it into a bowl. This is the part we will be using in this recipe. You will get approx. about 1 cup of cream from both cans.

    5) You should now be left with the coconut milk as shown in the photo above. Set this aside for another time. 

    6) Add the icing sugar and vanilla extract to the bowl with the coconut cream.

    7) On a medium to high speed, use electric beaters or an electric whisker to beat the cream for about 6 minutes or so until it becomes really thick. At first you may think that it is not working, but keep beating for the whole 6 minutes until it is visibly much thicker. 

    8) Serve immediately on scones, cakes or desserts or spoon into a piping bag and pipe for a lovely and tasty decoration. Enjoy!

    • You will need coconut cream... not coconut milk! Coconut cream has the creamy and fatty content needed to whip up a delicious cream.
    • If you would rather not use icing sugar, feel free to add any of your favourite sweeteners such as maple syrup, agave syrup etc...
    • When you are beating the cream, make sure you do it for the whole 6 minutes or so. if at one point you think it will not thicken up, continue to do it for the whole time because it will suddenly get extra thick and delicious!
    • Taste and add more icing sugar if you would like a sweeter cream.
