Vegan Guacamole Recipe

I was making a Mexican lasagne last night and I decided to make the perfect vegan guacamole to go with it. I really believe that avocados make any dish so much better! You can use this to accompany other meals or have it on its own as a dip.
This is my version of the perfect guacamole. It is easy, Mexican-y and 100% delicious!


  2 medium avocados, pitted
  1 1/2 tablespoons fresh lemon juice
  
2 - 3 tablespoons diced purple onion
  2 tablespoons diced tomato
  salt and pepper, to taste


  1. In a food processor, process avocados and lemon juice until almost smooth. Spoon out into a bowl.
  2. Add purple onion and tomato into the bowl. Stir until combined.
  3. Season with salt and pepper and serve with a Mexican dish or grilled tortillas.

  • Keep altering the recipe and adding to the dip until you are happy with the taste.
  • I normally cut up some tortillas, spray them with olive oil, season with salt and pepper and grill in the oven for a few minutes and serve them with the guacamole. 
  • Multiply the recipe to get your desired serving amount.

  2. Mmmmmmmmmmmmmm! Guacamole is an absolute favourite of mine - I could eat it all day :P
    A few years ago when a friend gave me a guacamole recipe it had sour cream in it but the past few months I've just stopped putting it in. The beauty is, it isn't even missed! And I'm really glad, since I love guacamole and if it had changed it I must admit I would have been disappointed.
    I usually just use a fork to mash the avocado, and add some garlic into the mix as well (I am a self-confessed garlic fanatic).
    I also find corn chips are lovely to dip! Add a bit of crunch to the pure guacamole.

    Hehe, but sometimes I get impatient and have a few forks of just the plain guacamole :P

    1. I know what you mean... it definitely doesn't need sour cream. Oh I love guacamole so much. I want to make some right now haha. I am a garlic fanatic too! You should have a look at our other recipes... there is garlic in EVERYTHING! Muahaha :)
